Smoky Chipotle Butter Garlic Chicken
Ingredients
Chicken
4 or 5 skinless boneless chicken breasts
¼ cup butter
2 tsp garlic powder
1 tsp seasoning salt
1 tsp onion powder
2 tbsp chipotle tabasco
2 tbsp liquid smoke
1 tbsp virgin olive oil
Brine
½ cup salt
~1L cold water
Prep
Soak chicken in brine 1 to 2 hours before cooking, with enough water to submerge fully
Cook
Mix dry ingredients in a small bowl
Melt butter in pan over medium-high heat
Add liquid smoke and chipotle tabasco
Toss chicken in, and sprinkle dry ingredients overtop evenly
Cook approx 10 mins each side
Optional: add olive oil if the mix dries out too much
Optional: sear each side of chicken over high heat for about a minute for crispy outer layer
