Creamy Cheesy Chicken Broccoli Cheddar Chowder
Ingredients
2 Chicken breasts
¼ tbsp Garlic powder
¼ tbsp Onion powder
¼ tbsp Paprika
¼ tbsp Salt
¼ tbsp Pepper
¼ cup Butter
1 Onion (large)
2 Carrots (medium)
2 Celery stalk
5 Button mushrooms
1 tsp chopped Garlics
2 Broccoli heads w/long stalks
1 box Chicken broth (not low sodium!)
1 cup Half/Half Cream
1 big squirt Ranch dressing (about ⅓ cup)
2 teaspoons Dijon
1 cup Old cheddar
2 Cheese slices
Prep
Chop vegetables
large onion
2 med carrots
1 stalk celery
5 button mushrooms
peel ALL the broccoli & chop stalks (save the broccoli heads for later)
Shred cheese
Cube chicken breasts into ½ inch chunks
Season chicken with garlic powder, onion powder, paprika, salt & pepper
Cook
Optional: Split the next two or three steps over multiple pans to save cooking time
Brown chicken in ⅛ cup butter on medium, then remove chicken and set aside
Add onion, carrots celery and ⅛ cup butter to pan and lightly brown
Add chopped mushrooms, chopped garlic and broccoli stalks
Cook until everything is brown (take care not to burn the garlic, it gets bitter)
Add chicken broth (scrape all the bits from the bottom of the pan)
Bring to a boil, then simmer until everything is tender
Optional: Microwave the broccoli florets now to save cooking time
Blend with an immersion blender until everything is smooth and consistent. No chunks!
Add broccoli heads to pot and cook until fork tender
Add cream, ranch dressing, Dijon mustard, cheese slices (prevents milk fat separation) and shredded cheese
Add chicken back to pan and season to taste with salt & pepper
Cook on low for 5 mins (don't let broccoli heads get soggy)
