Chocolate Snowballs
Ingredients
1 cup cocoa powder (Dutch if you want a smooth taste, natural for a sharper taste)
2 cups sugar
½ cup vegetable oil
4 eggs
2 tsp pure vanilla extract
2 cups flour
2 tsp baking powder
½ tsp salt
6 oz Baker's semi-sweet chocolate
Approx ¾ cup icing sugar
Parchment paper
Prep
The night before
In a big bowl mix cocoa, sugar & vegetable oil until consistent
Stir in eggs & vanilla
In a separate bowl thoroughly mix flour, baking powder & salt
Melt Baker's chocolate in microwave
Stir flour mix and melted chocolate into main mix until consistent
Seal with plastic wrap and stick it in the fridge overnight (or at least 4 hours)
Cook
Preheat oven to 350°F
Line cookie sheet with parchment paper
Dump icing sugar into an empty bowl
Important: the rapid change from cold to hot is what gives the cookies the cracked effect, so do the next steps quickly...
Remove cookie mix from fridge
Scoop out balls around 1" to 1.5" diameter
Roll balls in icing sugar until they're thoroughly coated & place on cookie sheet (drop a pinch or two of icing sugar on top of balls that aren't coated enough)
Throw balls into oven for around 10-12 mins
A normal sized cookie sheet should hold about 15 balls (half of the mix)
Store unused mix in fridge until ready to bake!
Remove from oven and let cool on cookie sheet for a few mins before moving to cooling rack
Repeat for remaining mix
Makes about 20 to 30 cookies depending on ball size
